The philosophy, which guides us, is based on the simplicity and authenticity applied to the dishes, both seafood and meat-based, typical of our region, which we aspire to reinvent, transforming them into an explosion of innovative taste, yet one that is still genuine and respectful of its origins.

The region is the starting point, not the end point. Executive Chef Andrea Cimino works by subtraction, eliminating every unnecessary element to achieve a clean and recognizable synthesis.

Each dish stems from a clear structure: the elements interact according to a precise hierarchy, allowing the main ingredient to maintain its centrality.

The wine list

A selection crafted with the same logic that guides the cuisine: each label responds to a specific purpose. Over two hundred wines, including local production, regional varietals, and rare vintages, with particular attention to Maremma winemakers and the appellations of the Tuscan coast.
